This beloved dessert combines a light sponge, sweet peaches and delicate whipped cream into a perfect harmony of flavors. It’s suitable as a sweet finish after lunch, an afternoon treat with coffee, or a festive dessert for family gatherings.

Preparation procedure

  • Preparation of the sponge batter: Separate the yolks and whites into two bowls. Whip the egg whites with a pinch of salt into stiff peaks, then gradually add the vanilla sugar and beat until the mixture is glossy and firm. Add the yolks one at a time and fold them in gently. Add the vanilla extract and the sifted flour with the baking powder to the mixture. Gently fold the batter with a spatula – movements from bottom to top, so as not to lose the airiness.
  • Baking the cake: Pour the batter into a greased pan measuring 24×20 cm and evenly spread the diced peaches over it. Bake in a preheated oven at 180 °C for approximately 35 minutes. After baking, let the cake cool completely.
  • Finishing and decoration: While the cake cools, whip the whipping cream until stiff. Then spread it evenly over the cooled cake. For a more festive look, you can decorate with peach slices or mint leaves.
