  • Thickening Pour the mixture into a saucepan and, stirring constantly, gently heat over low heat. Do not boil! Once it thickens (it must not curdle), remove from the heat and let it cool completely.
  • Cream part In a separate bowl, whip the cream until semi-stiff. Fold it into the cooled yolk mixture. If desired, add chopped chocolate, vanilla, nuts or fruit.
  • Freezing Pour the prepared mixture into a suitable container and place it in the freezer. During the first 2–3 hours, stir it every 30–60 minutes (e.g., with a fork) to prevent ice crystals from forming. After about 5–6 hours the ice cream is ready.
