Preparation procedure

  • Preparing the batter: In a bowl, mix the all-purpose flour, cocoa, baking powder and baking soda. In another bowl, beat the eggs with the sugar, then add the oil and milk. Gradually add the dry mixture and stir until a smooth chocolate batter forms.
  • Preparing the quark filling: Beat the quark with the sugar. Then gradually add the eggs, starch and flavoring (vanilla or rum). Mix until the mixture is smooth.
  • Assembling the cake: Line a baking sheet with parchment paper and pour the chocolate batter onto it evenly. Use a spoon to place dollops of the quark filling on the batter to create a „speckled“ effect.
  • Baking: Bake the cake in an oven preheated to 180 °C for approximately 50–55 minutes. About halfway through baking, perform a skewer test – if it comes out clean, the cake is done.
  • Finishing: Let the finished cake cool completely so it can be easily sliced. Then serve.
