  • Rinse the neck, pat dry and cut into slices about 1.5–2 cm thick. Lightly pound the slices and score the edges so they don't curl during baking. Pepper the meat on both sides with steak pepper and black pepper, drizzle with oil and place in a sealable container. Let marinate in the refrigerator ideally overnight.
  • The next day, heat lard or oil in a pan and sear the meat slices quickly on both sides until golden. Remove the meat and set aside. In the same fat, sauté the onion cut into half-moons, add the garlic slices and briefly sauté.
  • Return the meat to the onion, add the crushed cumin, add the beer and broth. Transfer to a roasting pan, cover and place in an oven preheated to 180 °C. Braise for about 60 minutes.
  • After an hour, add the pepper cut into cubes, uncover and bake for another 25–30 minutes, until the meat is perfectly tender and the sauce slightly thickens.
  • Season with additional salt and pepper to taste. If you want a thicker sauce, you can lightly thicken it with a little flour mixed in cold water.
