Preparation procedure

  • Dough preparation: Whisk the egg whites with a pinch of salt until stiff. Gradually add the sugar and whisk until the sugar dissolves. Then add the yolks and gently fold in. Sift the flour, baking powder, cocoa and cornstarch. Stir the nuts and the prepared flour mixture into the egg mixture.
  • Baking: Preheat the oven to 180°C. Spread the mixture on a baking sheet (30x40 cm) lined with baking paper and bake for 18 to 20 minutes. Let cool.
  • Cream: Whip the cream with the stabilizer and vanilla sugar until stiff. Spread the cooled cake with a thick layer of whipped cream, then arrange the drained cranberries on top.
  • Finishing: Drizzle the dessert with egg liqueur and finally garnish with grated chocolate.
