Preparation procedure

  • Dough preparation In a bowl, mix the flour, softened butter, powdered sugar, egg, yolk, baking powder, lemon zest and vanilla sugar. Work everything thoroughly until a smooth, non-sticky dough forms. Divide the dough into two parts and roll one of them out to the size of a baking sheet.
  • Preparing the filling In the second bowl place the soft quark, egg yolk, granulated sugar, vanilla sugar and lemon zest. Mix until smooth. The filling should be creamy but not too runny.
  • Filling and assembling Spread the quark filling evenly over the rolled-out dough on the baking sheet. Roll out the second portion of dough and place it as the top layer of the tart. Press gently and prick in several places with a fork so that steam can escape during baking.
  • Baking Preheat the oven to 180 °C and bake the tart for approximately 30–40 minutes, until the surface turns golden. Let cool and sprinkle with powdered sugar to taste.
