  • Preparing the dough: Separate the egg whites from the yolks. Whip the egg whites with the hot water until stiff peaks form. Beat the yolks with the sugar and vanilla sugar until pale and fluffy. Gently fold the beaten whites into the yolks.
  • Dry ingredients: Sift the flour, baking powder and starch, and gradually incorporate them into the mixture. Spread the batter on a baking tray lined with parchment paper and bake at 200 °C for about 15 minutes.
  • Rolling: Carefully transfer the hot sponge onto a clean towel sprinkled with powdered sugar, roll it up and let it cool.
  • Filling: Soak the gelatin in cold water. Mix the quark with the sugar, vanilla sugar, lemon juice and zest. Squeeze out the gelatin, dissolve it and stir it into the quark drop by drop. Chill for a while.
  • Assembly: Whip the cream until stiff and, as soon as the quark mixture begins to thicken, gently combine them. Spread the filling over the cooled sheet, roll again and let it set in the refrigerator for at least 3 hours.
  • Serving: Sprinkle with powdered sugar before serving. For extra freshness you can also add a few raspberries or lemon slices on top.
