Preparation procedure

  • Preparation of the dough: Mix the quark, softened Hera and flour into a smooth dough. Wrap it in cling film and let it rest in the refrigerator for at least 30 minutes.
  • Quark filling: Mix the quark with the egg yolk, sugar, vanilla sugar and lemon zest. The filling should be thick, not runny.
  • Poppy filling: Heat the milk, add the poppy seeds and simmer briefly. Then add the sugar and lemon zest. Let cool.
  • Forming the turnovers: Divide the dough into smaller portions, roll out into sheets and cut into squares. Put a teaspoon of quark filling, a portion of poppy filling and a little strawberry jam on each piece. Fold the corners of the dough into the center and press firmly so the filling doesn't leak out.
  • Baking: Arrange the turnovers on a baking sheet lined with parchment paper. Bake in a preheated oven at 180 °C for about 20–25 minutes, until they turn golden.
  • Finishing: Once cooled, you can lightly dust them with powdered sugar.
