Can’t decide whether you’re in the mood for a quark, poppy seed or jam dessert? Then we have a great compromise for you – homemade turnovers with quark, poppy seeds and strawberry jam. They combine three popular flavors into one pastry and are perfect with coffee, for celebrations or as a sweet reward after a long day.

Ingredients

For the dough:

250 g quark (preferably full-fat)
250 g Hera or butter
300 g plain flour

Quark filling:

250 g quark
1 egg yolk
sugar to taste
vanilla sugar
a little lemon zest

Poppy filling:

100 ml milk
100 g ground poppy seeds
sugar to taste
a little lemon zest

Other:

strawberry jam
powdered sugar for dusting

Preparation procedure

Preparation of the dough: Mix the quark, softened Hera and flour into a smooth dough. Wrap it in cling film and let it rest in the refrigerator for at least 30 minutes.
Quark filling: Mix the quark with the egg yolk, sugar, vanilla sugar and lemon zest. The filling should be thick, not runny.
Poppy filling: Heat the milk, add the poppy seeds and simmer briefly. Then add the sugar and lemon zest. Let cool.
Forming the turnovers: Divide the dough into smaller portions, roll out into sheets and cut into squares. Put a teaspoon of quark filling, a portion of poppy filling and a little strawberry jam on each piece. Fold the corners of the dough into the center and press firmly so the filling doesn't leak out.
Baking: Arrange the turnovers on a baking sheet lined with parchment paper. Bake in a preheated oven at 180 °C for about 20–25 minutes, until they turn golden.
Finishing: Once cooled, you can lightly dust them with powdered sugar.
