Thanks to the combination of milk, cream and smoked stock a delicate and creamy sauce is created that pairs wonderfully with smoked meat and dumplings. This recipe is adjusted for 2 servings, but it’s so tasty that next time you’ll surely make it for the whole family.

  • Heating the base: In a pot, mix the milk, smoked stock and sugar. Bring to a boil and let it bubble briefly.
  • Thickening: In a separate bowl whisk the cream with the plain flour until a smooth mixture forms. While stirring constantly, pour it into the boiling mixture in the pot. Simmer over low heat for about 15 minutes, until the sauce thickens and the flour is cooked through.
  • Seasoning: Add salt, pepper and grated horseradish. Cook briefly, only 1–2 minutes, so the horseradish doesn't lose its aroma. If you prefer a perfectly smooth consistency, strain the sauce through a fine sieve.
