Preparation procedure

  • Preparing the batter: In a bowl beat the whole eggs with the sugar until pale and frothy. Add the oil, milk and beat briefly again.
  • Stir in the sifted plain flour combined with the baking powder. A smooth, semi-liquid batter will form.
  • Pour the prepared batter onto a baking tray (25×30 cm) lined with baking paper.
  • Cottage cheese filling: Mix the cottage cheese, lemon zest, sugar and semolina. Using a small spoon, create cottage cheese dollops on the batter evenly across the surface.
  • Adding the peaches: Drain the canned peaches, cut into smaller pieces and place them between the cottage cheese dollops, gently pressing them into the batter.
  • Baking: Place into a preheated oven at 180 °C and bake for about 30 minutes, until the cake turns golden and a toothpick inserted into the center comes out clean.
  • After baking let the cake cool, dust with powdered sugar and cut into squares.
