Preparation procedure
- We put the softened butter into a bowl together with the flour, baking powder and powdered sugar and mix
- We add cocoa, 4 egg yolks and work into a uniform dough
- We set the smaller half of the dough aside in the refrigerator and let it firm up
- We grease the baking tray with butter
- We roll out the dough, or press it by hand into a flat layer
- We spread jam over the surface of the dough and arrange the first layer of apples
- Then we drizzle with lemon juice and sprinkle with cinnamon
- We whip the egg whites and sugar into a meringue and layer it on top of the apples
- We grate the dough chilled from the fridge as the final layer of the cake (or alternatively roll it out, cut into strips and cover the cake in a criss-cross pattern)
- Bake for about 40 minutes at 180°C.
- Then let it cool and serve
