Preparation procedure

  • Preparation of the ladyfingers: First separate the egg white and the yolk. Beat the egg white with the powdered sugar until stiff peaks form. Add the yolk and beat again. Gently fold the sifted flour into the egg mixture until a compact mass forms. Transfer this mixture into a piping bag and shape long ladyfingers on a baking sheet lined with parchment paper. Sprinkle the ladyfingers with powdered sugar and bake for 8–10 minutes in a preheated oven at 180 °C.
  • Preparation of the cream: Beat the mascarpone with the vanilla extract until smooth. In a separate bowl, whip the cream with the powdered sugar until firm whipped cream forms. Thoroughly combine both mixtures.
  • Preparation of the coffee topping: Prepare the coffee from the instant coffee and granulated sugar, and let it cool.
  • Assembling the dessert: Dip the ladyfingers into the cooled coffee and layer them on the bottom of the pan. Spread cream over each layer of ladyfingers, alternating with ladyfingers, until all ingredients are used. Finally smooth the surface and sprinkle with cocoa.
  • Let the dessert chill in the refrigerator for at least 30 minutes before serving.
