Preparation procedure

Preparing the pudding: Mix the pudding powder with a little milk until smooth. Then add the sugar and the remaining milk. Cook over low heat, stirring constantly, until the pudding thickens. Let it cool.
Preparing the batter: Mix the plain and coarse flour with the baking powder and a pinch of salt. In another bowl, whisk the egg whites to stiff peaks. Beat the yolks with the sugar until foamy, add the water and oil. Then add the flour mixture and mix well. Finally, gently fold in the stiff egg whites.
Baking the batter: Divide the batter into two halves. Stir the cocoa into one portion and alternately spoon both batters onto a baking sheet lined with parchment paper. Then swirl them slightly with a fork to create a marble effect. Spoon the lukewarm pudding on top so that it sinks a little into the batter. Bake in a preheated oven at 200 °C. After 5 minutes reduce the temperature to 180 °C and bake for another 40–45 minutes, until the batter turns golden. Do not open the oven during baking.
Preparing the cream: Prepare the gelatin according to the instructions on the package. Mix the sour cream with the powdered sugar and the dissolved gelatin. Spread the finished mixture evenly over the cooled cake.
Chilling: Place the cake in the refrigerator so the cream sets well. Sprinkle with cocoa before serving.
