Preparation procedure

  • Preparing the dough: Beat the egg yolks with the sugar until light and foamy. Add the milk, softened fat and mix briefly. Then fold in the flour mixed with the baking powder and the lemon zest.
  • Baking the base: Spread the batter evenly into a greased and floured pan. Bake in a preheated oven at 180 °C for 10 minutes.
  • Preparing the meringue layer: Meanwhile, beat the egg whites until foamy. Add half of the sugar and continue beating. After a while add the remaining sugar and the lemon juice. Beat for about 5 minutes, until stiff peaks form.
  • Finishing the cake: After 10 minutes of baking, remove the cake from the oven and reduce the temperature to 120 °C. Spread the surface evenly with apricot jam, sprinkle with ground walnuts, and spread the meringue layer on top.
  • Second baking: Return the cake to the oven and bake for another 30 minutes at 120 °C, until the meringue layer turns golden. After baking, let the cake cool completely so the flavors can meld nicely.
