Preparation procedure

  • Prepare the marinade Place the garlic, thyme, parsley, citrus juices, oil, paprika, pepper and honey into a tall container. Blend everything with an immersion blender into a smooth mixture. Finally add salt and soy sauce.
  • Cut and open the meat Carefully cut the loin lengthwise so that a thin "meat sheet" is formed. Spread one third of the marinade on the meat, keeping the rest for brushing the surface.
  • Prepare the stuffing Sauté the chopped garlic, onion and grated carrot in oil. Add the mushrooms, salt and stew until soft. Finally add the chopped smoked ham and simmer everything together for a while.
  • Assembling the roulade On the spread-out meat place the bacon, layer the stuffing and sprinkle with raisins. Roll the meat again and tie with kitchen twine.
  • Roasting Place the roulade in the center of a roasting pan, arrange the salted and peppered potatoes and onion around it. Pour everything with the wine and water mixture. Brush the meat with the remaining marinade. Roast at 200 °C for about 40 minutes.
  • Preparing the sauce After baking, remove the meat and potatoes. Pour the drippings into a pot, add the remaining marinade and the dissolved cornstarch. Bring to a boil so the sauce thickens, and blend until smooth.
