Preparation procedure

Dissolve the gelatin in a small amount of lukewarm water, stir into the strawberry purée and briefly simmer until the mixture thickens. Let it cool slightly and spread over the cooled sponge. Chill in the refrigerator for at least 30 minutes.
  • Whipped cream layer Whip the cream with the vanilla sugar and lemon juice until firm, add the stabilizer and whip briefly again. Spread over the strawberry layer and smooth.
  • Finishing and serving Let the slices chill in the refrigerator for another 30 minutes and then cut into 12–16 servings. Serve chilled as a refreshing dessert.
