Preparation procedure

  • Dough preparation: In a bowl, whip the egg whites with a pinch of salt and the sugar into stiff peaks. In another bowl, mix the ground walnuts with the flour. Add the nut-and-flour mixture to the beaten egg whites by spoonfuls and gently fold. Roll out the dough on baking paper on a large baking sheet. Smooth it and place in the preheated oven. Bake at 170 °C for approximately 15 minutes. After baking, immediately remove the baking paper and let the dough cool.
  • Cream preparation: In a saucepan, melt 40 g of butter, add 3 tablespoons of plain flour and 1 tablespoon of sugar. You will create a white roux. Then pour in 80 ml of strong black coffee and cook briefly. Let it cool. Whip the remaining butter with the sugar until fluffy and gradually add the cooled roux.
  • Assembly of the cookies: Cut the cooled dough into strips. Spread them with the prepared cream and press them together. Finally, cut into neat slices.
  • Finishing: Dip half of the cookies into the chocolate glaze, let set, and serve.
