The Vitacit cake is a light and colorful dessert that combines a fluffy base, creamy quark and a fruit glaze enriched with the popular Vitacit (or Tang) fruit powder. Thanks to its pronounced flavor and fresh appearance, it will refresh your table during family celebrations and on an ordinary afternoon.

Preparation procedure

  • Preparation of the base: In a bowl, beat the eggs with the sugar until frothy. Add the water, oil, sifted flour, baking powder and cocoa. Pour the resulting liquid batter onto a baking sheet lined with parchment paper and bake in a preheated convection oven at 220 °C for approximately 15 minutes. After baking, let the base cool completely.
  • Preparation of the cream: In a bowl, beat the softened butter with the powdered sugar into a smooth foam. Gradually beat in the quark and rum until a fluffy quark cream forms. Spread the cream evenly over the cooled base.
  • Preparation of the fruit glaze: In the water, bring the vanilla sugar and Vitacit fruit powder to a boil. In a small bowl, mix the pudding powder with a little cold water and, stirring constantly, pour it into the boiling mixture. Cook briefly until the glaze thickens. Pour the hot glaze over the cake with the cream.
  • Chilling and serving: Let the cake chill in the refrigerator for at least 2 hours so the glaze can set and the flavors meld. Before slicing, use a sharp knife and serve chilled.
