Preparation procedure

  • Peel the onion and garlic. Cut the leek (white part) into smaller pieces. Peel the carrot – grate one coarsely, slice the remaining two into rounds. Peel the potatoes and cut into small cubes. Remove the seeds from the pepper and dice it. Chop the parsley leaves, keeping the stalks separate.
  • In a larger pot, heat the oil with the butter. Add the grated and sliced carrot and briefly sauté. Add the soup vegetable mix, season with salt and pepper and stir. Pour in hot water (approx. 1.5–2 liters depending on desired thickness). Add the crumbled bouillon cubes, the whole onion, the leek and the pressed garlic. Cover with a lid and simmer over low heat for about 8–10 minutes.
  • Add the diced potatoes to the soup and cook for about 5 minutes. Then add the frozen peas and green pepper and continue cooking for another 3–4 minutes.
  • In a bowl, whisk the egg with a pinch of salt and the chopped parsley. Gradually add the medium-ground flour until a thicker, slightly sticky dough forms. Using a spoon, take small pieces of dough and drop them directly into the gently boiling soup. The halušky are done when they float to the surface.
  • Place the whole parsley stalks into the finished soup, cover the pot and let the soup rest for about 5 minutes. Then gently stir and adjust seasoning with salt and pepper if necessary.
