Preparation procedure

  • Crumble the yeast into the lukewarm milk, add the sugar and stir briefly. Let sit for 10–15 minutes until a foam forms on the surface. This is a sign that the yeast is active.
  • Pour the flour, salt and, if using, the baking powder into a large bowl. Make a well in the center and add the yogurt, eggs, oil and the prepared yeast starter.
  • First mix with a wooden spoon, then knead by hand into a smooth, soft and elastic dough. Add small amounts of flour as needed, but take care to keep the dough rather soft.
  • Shape the dough into a ball, lightly brush it with oil and place it in a sealable container or plastic bag. Close it so that no air remains inside. Immediately put it in the refrigerator and let it rest for at least 3–4 hours, ideally overnight.
