The lamb is one of the most typical Easter symbols. It is baked from sponge, quark or butter dough and its aroma instantly evokes a festive atmosphere. This fluffy and lightly lemony lamb cake will please not only children but also adults, and will adorn every festive table.

Preparation procedure

  • Separate the egg whites from the yolks. Beat the yolks with the sugar until frothy, add the oil, milk, lemon zest and vanilla sugar.
  • Stir in the flour with the baking powder.
  • Whisk the egg whites into stiff peaks with a pinch of salt and gently fold them into the batter.
  • Thoroughly grease the lamb mold and dust it with flour.
  • Pour the batter into the mold and bake at 170 °C for about 45 minutes.
  • After baking, turn out of the mold and, once cooled, dust with powdered sugar.
