Preparation procedure

  • Preparing the dough: Heat the water with the oil in a saucepan. As soon as the mixture begins to boil, add the plain flour and stir constantly until a smooth dough forms that does not stick to the sides of the pan. Let the dough cool slightly. Then beat the eggs in one at a time – always mix each one in thoroughly before adding the next.
  • Shaping and baking the cream puffs: Using a piping bag or spoons, form small cream puffs (rings about 6 cm in diameter) on a baking sheet lined with parchment paper. Bake in a preheated oven at 200 °C for approximately 8 minutes, then reduce the temperature to 180 °C and bake for another 20 minutes until golden. Do not open the oven during baking to prevent the dough from collapsing.
  • Preparing the vanilla cream: Bring the milk almost to a boil. In another bowl whisk the eggs with the sugar and flour into a smooth mixture. While stirring constantly, slowly pour in the hot milk. Return the mixture to the stove and cook, stirring constantly, until the cream thickens. Finally add the vanilla extract and let cool.
  • Finishing: Slice the cooled cream puffs lengthwise. Fill the bottom part with vanilla cream and whipped cream. Place the top on and optionally dust with powdered sugar.
