Preparation procedure

  • Preparing the syrup for pasteurizing the yolks: In a small saucepan heat 50 ml water with 100 g sugar for approximately 2 minutes, until the sugar is completely dissolved and the syrup becomes glossy. The temperature should reach about 121 °C. Do not burn it; it must not caramelize.
  • Pasteurization and cream: Slowly pour the hot syrup into the yolks while whipping on high speed. Continue whipping for 5–6 minutes, until the mixture lightens in color and becomes frothy. Then add the cold mascarpone and whip until a smooth, silky cream forms.
  • Strawberry syrup for the biscuits: Blend 200 ml water, 50 g sugar and 3 strawberries in a blender. You can strain it through a fine sieve.
  • Preparing the strawberries: Cut the strawberries into smaller pieces. Add a tablespoon of sugar and a few drops of lemon juice. Stir and let rest briefly.
  • Assembling the tiramisu: Briefly dip the biscuits in the strawberry syrup and place them on the bottom of a baking dish. Spread half of the mascarpone cream, sprinkle with the chopped strawberries and white chocolate shavings. Repeat the second layer – biscuits, cream and the remaining strawberries.
  • Garnish and chilling: Place a few more strawberries and chocolate shavings on top. Let the tiramisu rest in the refrigerator for at least 1 hour (ideally overnight).
