  • Preparing the sponge base: Separate the yolks from the whites. Beat the egg whites with a pinch of salt until stiff peaks form, then gradually add the sugar and beat until firm. Gradually fold in the yolks, sift in the flour combined with the baking powder and gently fold in the instant coffee.
  • Baking: Spread the batter into a baking pan (25 × 35 cm) lined with baking paper. Bake in a preheated oven at 175 °C for about 15 minutes, until the surface turns golden. After baking, let the base cool on a wire rack.
  • Preparing the cream: Whisk the cooled pudding with mascarpone until smooth. Whip the cream with the stabilizer to stiff peaks and then gently fold it into the mascarpone cream.
  • Assembling the dessert: Place the base on a tray and put an adjustable ring around it or return it to the pan. Spread the mascarpone cream evenly over the base and chill in the refrigerator for one hour.
  • Preparing the sponge layer: Dissolve the instant coffee in the milk and lightly dip the small sponge biscuits in it. Arrange them over the layer of cream.
