Preparation procedure

  • Preparing the batter: Cream the butter with the powdered sugar until fluffy. Gradually add the eggs and mix thoroughly. Fold in the ground hazelnuts, flour, cocoa and baking soda. Pour the batter into a greased baking tray and bake in a preheated oven at 160 °C for approximately 20 minutes. After baking, let it cool.
  • Preparing the cream: In 200 ml of milk, whisk together the pudding powder, cocoa, sugar and egg yolks. Bring the remaining milk to a boil, then add the pudding mixture and, stirring constantly, cook until a thick cream forms. Cover with cling film and let cool. Beat the butter until fluffy and gradually beat in the cooled cocoa cream.
  • Preparing the nut filling: Mix the chopped hazelnuts, powdered sugar, vanilla sugar, milk or rum and the rum flavor. Heat over low heat until the mixture comes together, then let cool.
  • Assembling the dessert: Spread a layer of jam over the baked base. Evenly spread the nut filling and then the cocoa cream. Place the dessert in the refrigerator to allow the cream to set.
  • Preparing the chocolate glaze: Melt the chocolate and butter in a double boiler and mix until smooth. Pour the glaze over the dessert and let it set.
  • Decoration: Decorate the dessert with whole hazelnuts.
