Preparation procedure

  • Preparing the light base: In a bowl, mix the flour, sugar and baking powder. Add the eggs, oil, water and vanilla extract and whisk into a smooth, liquid batter.
  • Preparing the dark base: In another bowl, cream the softened butter with the powdered sugar, add the egg, flour, cocoa and baking powder. Gradually add water so the batter is thinner but not runny.
  • Preparing the quark filling: In a bowl, mix the quark with the sugar, eggs, vanilla extract and lemon zest until a smooth filling forms.
  • Layering into the pan: Prepare a baking tray (30×25 cm) lined with baking paper. First spread the dark batter, using your fingers or a spatula spread it evenly over the entire bottom. Carefully spread the quark filling over the cocoa batter and smooth it. Finally pour the light batter so that it covers the filling, and use a spatula to fill all gaps.
  • Baking: Place in a preheated oven at 180 °C and bake for 45 minutes, until the surface is golden and the filling is set (check with a skewer).
  • Cooling and cutting: Let the bars cool in the pan, then turn them out onto a wire rack and let cool completely. Cut into 24 portions with a sharp knife.
