Preparation procedure
- 1. Preparing the nuts and fruit: Chop the nuts into smaller pieces and briefly toast them in a dry pan for a more intense flavor. Peel and coarsely grate the apples and carrots. Mix the raisins and cranberries, grind the nuts in a blender.
- 2. Mixing the dry ingredients: In a bowl, mix all the dry ingredients, i.e., the flour, sugar, rolled oats, flaxseeds, baking powder, baking soda, cinnamon and a pinch of salt. Add the chopped nuts, raisins and cranberries.
- 3. Mixing the batter: Add the grated apples, carrots and eggs to the mixture. Pour in the milk and mix everything thoroughly until a homogeneous batter forms.
- 4. Baking: Prepare a baking tray measuring 25 x 35 cm, line it with baking paper and spread the batter onto it evenly. Preheat the oven to 180 °C and bake for about 40 minutes, until the cake is golden and cooked through. After baking, let the cake cool.
- 5. Chocolate glaze: Melt the chocolate in a water bath and add a tablespoon of oil to it. Once the cake has cooled, cut it into squares and drizzle each square with a teaspoon of chocolate glaze.
- 6. Decorating: You can decorate the cake with dried fruit or additional nuts to taste.
