Bryndza dumplings, a traditional Slovak dish that reminds me of my childhood But as we all know, it isn’t a healthy diet treat, rather a calorie-rich dish for a cheating day
However, I have good news for you I couldn’t help thinking and coming up with this recipe in a healthier version are you curious how to prepare healthy bryndza dumplings at home???
Bring salted water to a boil in a pot. While the water is heating up, we’ll make the dough for the dumplings.
Mix all the ingredients for the dumplings in one bowl and stir well. If the dough is very dry, we can add a little water. The dough should be a thicker consistency so it doesn’t spread.
Next, when the water boils, use a small teaspoon to scoop the dough and slowly put it into the water
(dumpling size approx. 1 cm – if you have a dumpling sieve and it’s easier for you, you can try that too. But personally I find the spoon easier).
Cook the dumplings for about 3 – 5 min in boiling water. It depends on the size of the dumplings. Therefore I recommend after 3 min of cooking on low heat, try tasting to see their doneness. If the dumplings are cooked, we take them out, put them in a sieve (I recommend running them briefly under cold tap water so they don’t stick) and pour them into a container.
In a second bowl put the bryndza and white Greek yogurt and work the mixture until smooth, without lumps.
In a pan we can fry the ham or tofu in coconut fat (but if you don’t like it, you don’t have to add it). While the ham is being fried prepare a plate on which you will place the dumplings, pour them with the bryndza and after frying sprinkle with the ham or tofu. On top add chopped chives (spring onion).
And we can serve.
