Preparation procedure

  • Preparing the apple filling: Peel the apples and coarsely grate them. Mix them with 2 tablespoons of sugar and a pinch of cinnamon. Melt the butter in a pan, add the prepared apples and briefly stew them until they soften. Stir in a tablespoon of honey or apricot jam and mix. Remove from heat and let cool.
  • Preparing the dough: In a bowl, whisk the eggs with the sugar and vanilla sugar until foamy. Add the oil and mix again. Gradually add the flour mixed with the baking powder and stir until a smooth batter forms. Divide the dough into two portions.
  • Assembling the cake: Spread half of the dough over the bottom of a baking pan lined with parchment paper. Evenly spread the prepared apple filling over the dough and level it. Roll out the second half of the dough and place it over the filling. Lightly prick the surface with a fork.
  • Finishing and baking: Whisk the egg white with the powdered sugar into a smooth glaze and spread it evenly over the surface of the cake. Warm the apricot jam slightly and create a lattice on the glaze. Bake the cake in a preheated oven at 180 °C for 40 minutes.
