  • Thoroughly wash, dry and finely chop the fresh dill. The finer it is chopped, the smoother the sauce will be.
  • In a pot, gently heat a small amount of the stock, add the chopped dill and briefly sweat it lightly so its flavor develops. Sprinkle in the plain flour, stir and briefly toast it to form a light roux.
  • Gradually pour in the remaining stock, stirring constantly to prevent lumps. Salt and simmer over low heat for about 10–15 minutes, until the sauce slightly thickens and the dill softens.
  • Finally add the wine vinegar to taste. You can stir the sour cream directly into the pot (recommended) or add it to the finished sauce just before serving. Do not boil the sauce vigorously afterwards so the cream does not curdle.
