This incredibly delicate quark cake literally melts on the tongue. Thanks to the combination of fluffy sponge and creamy quark cream you’ll get a dessert you’ll fall in love with at the first taste. It’s light, fresh and ready in no time!

Preparation procedure

  • Beat the eggs with the sugar until light and frothy.
  • In another bowl, mix the flour, vanilla sugar, baking powder and a pinch of salt. Gradually fold into the egg mixture and gently combine.
  • Prepare a 20 × 30 cm baking tray, line it with baking paper and lightly oil it.
  • Bake at 200 °C for 10 minutes, until the dough turns golden.
  • Meanwhile prepare the cream – mix the quark with the sugar. Whip the cream separately and then gently fold it into the quark mixture.
  • Slice the baked base in half. If the base has uneven edges, you can trim them.
  • Spread a layer of cream on one half, cover with the second layer and use the remaining cream to coat the entire surface of the cake.
  • Finally sprinkle with cocoa and let the cake cool.
