Preparation procedure

  • Preparing the dough: Beat the eggs with the sugar until light and fluffy. Mix the flour with the vanilla sugar, baking powder and a pinch of salt. Gradually add the dry ingredients to the egg-and-sugar foam.
  • Baking the base: Line a 20 × 30 cm baking tray with baking paper and lightly grease it with oil. Pour the batter onto the tray and bake in a preheated oven at 200 °C for about 10 minutes.
  • Preparing the cream: Mix the quark with the sugar and vanilla sugar. Whip the cream separately until stiff and then gently fold it into the quark mixture.
  • Assembling the cake: Let the baked base cool and then cut it in half. If the edges of the base are uneven, you can trim them. Spread a layer of cream onto one half and top it with the other half. Spread the remaining cream over the top of the cake and smooth with a knife.
  • Finishing: Dust the finished cake with cocoa and let it rest in the refrigerator for at least 2 hours so the flavors meld perfectly.
