Prepare a master yeast dough that will turn you into a baker right at home – moist, airy and perfectly delicious. This recipe is one of those everyone likes to save, because you can make bread, baguettes and sweet pastries with jam from it. Preparation procedure

  • Stir the sugar into the lukewarm milk and sprinkle in the yeast. Let stand for about 10 minutes until the mixture begins to foam – this means the yeast is active and ready to work.
  • Sift the flour with the salt into a bowl, make a well in the center and pour in the activated yeast mixture, add the egg and softened butter. Mix with your hands or a wooden spoon until all ingredients are combined.
  • Turn the dough out onto a floured work surface and knead for about 10–12 minutes until smooth and elastic. If it is too sticky, add flour a teaspoon at a time so the dough does not lose its softness.
  • Transfer the dough to a bowl greased with butter or oil, cover with a cloth and let rise in a warm place for about 1 hour, until it has doubled in size.
  • After rising, gently work the dough and shape as needed (for baguettes, loaves or buns). Let rise for another 20 minutes.
  • Preheat the oven to 190 °C (170 °C fan). Brush the surface of the dough with egg and sprinkle with seeds or salt to taste. Bake 25–30 minutes, until the dough has a beautiful golden-brown color. After removing from the oven, let cool on a wire rack.
