Preparation procedure

  • Beans should be soaked a day in advance. (It is recommended to soak the smoked meat as well)
  • Sauté the onion in lard, add the peppers and tomatoes and fry together, then add the smoked meat. Add the bay leaf, pepper, salt carefully and brown the meat as well.
  • Add stock, add the beans and simmer. Towards the end add the chopped vegetables and finish cooking. Finally thicken with a garlic and paprika roux
