Mini sponge moles are an ideal dessert for any occasion – they look festive, taste like they’re from a patisserie and their preparation is surprisingly simple. The combination of airy sponge and delicate mascarpone cream creates an irresistible combination that the whole family will love. In addition, your home will be filled with a sweet vanilla scent that will draw everyone to the table.

Preparation procedure

  • Sponge preparation Preheat the oven to 180 °C. Separate the yolks and whites. Beat the egg whites with a pinch of salt until stiff peaks form. Beat the yolks with the sugar until pale and fluffy. Add the flour with the baking powder and finally gently fold in the egg whites. Spread the batter on a baking sheet lined with parchment paper and bake for about 10–12 minutes. Let cool, then cut out circles. Blend the leftover cake finely – you will use it for coating.
  • Cream filling Whip the cream until stiff. In another bowl, mix mascarpone, powdered sugar, vanilla extract and optionally a little rum. Finally gently fold the whipped cream into the mixture.
  • Assembling the dessert Pipe a dollop of the cream onto each sponge round using a piping bag. Roll in the crushed sponge crumbs and lightly dust with powdered sugar. Refrigerate for at least 30 minutes to allow the flavors to meld.
