Do you remember childhood and the smell of a homemade cake that filled the whole apartment? That’s exactly what the old-fashioned speckled cake is like. Simple, quick and yet exceptionally tasty. This retro recipe hides a delicate sponge cake, a rich chocolate glaze and soft whipped cream on top. Great with coffee, for a celebration or just for pleasure.

Preparation procedure

  • Preparing the sponge batter: Beat the eggs with the sugar, vanilla sugar and a pinch of salt until frothy. Add the oil, mix and pour in the sparkling water. Add the flour mixed with baking powder in portions and beat into a smooth batter.
  • Baking: Pour the batter onto a baking sheet (approx. 37×26 cm) lined with baking paper and bake in a preheated oven at 180 °C for about 30 minutes, until the surface is golden. Let cool.
  • Chocolate glaze: Dissolve the sugar in the water and add the cocoa. Stir thoroughly with a whisk to avoid lumps. Add the butter, broken chocolate and briefly bring to a boil. After removing from the heat, stir in the rum flavoring.
  • Assembling the cake: Prick the cake all over with a skewer and pour the glaze using a ladle. Spread evenly and let absorb for about 10 minutes.
  • Finishing: Whip the cream until stiff and spread over the entire surface of the cake. Decorate with grated chocolate or chocolate sprinkles. Chill the cake in the refrigerator for at least 1 hour.
