Preparation procedure
- First, heat water for the spaghetti in a pot.
- Meanwhile, prepare the ingredients.
- Crack the eggs and separate the yolks from the whites.
- Grate the Parmesan finely. Don't be stingy with this fragrant cheese; I used almost all of it.
- Put the grated cheese into a larger bowl.
- First, cut the bacon into smaller pieces.
- Then fry it in a pan.
- Pour the cream into the pan with the bacon and let it warm over low heat. The cream must not boil.
- Add 4 yolks to the Parmesan and mix into a paste. If the paste is too thick, you can add another yolk.
- Then add a few tablespoons of the pasta water.
- Stir until a thinner mixture forms.
- Season it with salt and pepper.
- While stirring constantly, pour this mixture into the cream with the bacon and let it all warm through.
- Put the cooked spaghetti into a large bowl and pour the sauce over them.
- Stir and serve.
- You can grate more Parmesan on top and garnish with parsley or basil.
