Preparation procedure

  • Prepare the starter: Pour lukewarm milk into a bowl, add the yeast and a tablespoon of sugar. Let it sit for a few minutes until the mixture starts to foam.
  • Knead the dough: To the starter add the flour, the rest of the sugar, a pinch of salt, the egg yolks and the melted butter. Knead the dough until smooth and non-sticky. Cover and let rise for about 1 hour, until it doubles in volume.
  • Prepare the quark filling: Mix the quark, egg, orange-flavored sugar, grated zest, sugar to taste and a little rum. The filling should be compact but creamy.
  • Shaping the buns: Divide the risen dough into equally sized pieces, roll each out, fill with a tablespoon of quark and carefully wrap. Place the shaped buns seam-side down on a baking sheet lined with parchment paper.
  • Second rising: Brush the surface of the buns with melted butter and let them rise for another 15 minutes.
  • Baking: Preheat the oven to 170 °C. Brush the buns with butter again and bake for approximately 30 minutes, until golden.
  • Softening after baking: Immediately after removing from the oven, lightly spray the buns with water and cover with a cloth so they stay wonderfully soft.
