  • Preparing the batter: In a bowl, beat the eggs with the sugar until light and frothy. Add the vanilla sugar, baking powder, kefir, lemon zest and oil. Mix everything thoroughly until a smooth mixture forms.
  • Adding the flour: Gradually add the plain and semi-coarse flour to the mixture. Stir until the batter is smooth and free of lumps.
  • Cherries: Gently fold the cherries into the batter. If using frozen cherries, let them thaw and drain beforehand.
  • Baking: Preheat the oven to 180 °C (top and bottom heat, no fan). Pour the batter onto a baking sheet lined with parchment paper and spread evenly. Bake for about 45 minutes, until the surface of the bublanina turns golden.
