Preparation procedure

  • Pour lukewarm water into a bowl, add the sugar and dried yeast. Stir and let stand about 10 minutes until a foam forms on the surface. This is a sign that the yeast is working properly.
  • Put the flour and salt into a large bowl and mix. Make a well in the middle, pour in the activated yeast and add the olive oil. Gradually work into a smooth dough.
  • Transfer the dough to a lightly floured work surface and knead for at least 8–10 minutes. The result should be an elastic, smooth and non-sticky dough. Add flour only very carefully.
  • Place the dough back into the bowl, cover with a cloth and let rise in a warm place for about 60 minutes, until it doubles in size.
  • Divide the risen dough into 8 equal pieces. Shape each into a smooth ball and place on a baking sheet lined with parchment paper. Let rest for another 15 minutes.
  • Preheat the oven to 230 °C. Lightly brush the rolls with oil or butter before baking and sprinkle with seeds to taste. Bake for 18–20 minutes until golden. After baking, let cool on a wire rack.

Tips for a perfect result

  • For an extra-crispy crust, place a small dish of hot water on the bottom of the oven

  • For a softer crumb, add 1 tablespoon of milk or yogurt
