Just a few basic ingredients, a moment in the oven and it’s done. Ideal with coffee, for a family celebration or as a quick treat after lunch.

Preparation procedure

  • Preparing the batter: Separate the egg whites from the yolks. Beat the egg whites with a pinch of salt until stiff peaks form. Beat the yolks with the sugar and vanilla sugar until frothy, then add the flour and gently fold into the egg whites.
  • Shaping the batter: Put half of the batter into a piping bag, pipe diagonal stripes onto the baking paper. Stir cocoa into the remaining batter and use it to fill the gaps between the stripes.
  • Baking: Bake in an oven preheated to 180 °C for about 10 minutes. After baking, roll the cake together with the paper into a towel and let cool.
  • Filling: Whip the cream with the stabilizer and powdered sugar into stiff whipped cream. Add pieces of mandarins or other fruit.
  • Assembling the roulade: Unroll the cooled sponge, spread it with the whipped cream and fruit, and carefully roll it back up.
  • Chilling and serving: Place in the refrigerator for at least 2 hours. Before serving, you can sprinkle with powdered sugar or garnish with fresh fruit.
