Preparation procedure

  • Clean the chicken livers, remove membranes and any veins. Place them between two pieces of cling film and very gently pound them, just enough to break up the meat's structure.
  • Cut the livers into larger strips, put them in a bowl and sprinkle with ground paprika and cornstarch. Mix thoroughly so that each piece is coated.
  • Add the pressed garlic, stir briefly and let the livers rest for about 15 minutes.
  • In a small bowl, mix the tomato paste with the honey and add hot water until a medium-thick sauce forms.
  • Heat the pork lard in a large pan, add the marinated livers and sear them quickly on both sides so they set.
  • Add the finely chopped onion, sauté it briefly, then pour in the prepared sauce.
  • Salt to taste, cover with a lid and simmer over low heat for about 10 minutes. The livers must remain soft, so do not overcook them unnecessarily.
