Preparation procedure

  • Preheat the oven to 200 °C (convection 180 °C).
  • Fry the bacon in a pan without oil until golden and let it drain on a paper towel. Then chop or crumble it into smaller pieces.
  • Roll out the puff pastry on a lightly floured work surface and cut into 12–15 squares about 5 × 5 cm in size.
  • Place a small amount of the fried bacon in the center of each square and sprinkle with grated cheese. You can also add a pinch of dried herbs to taste.
  • Fold the corners of the pastry over the filling to form a roll or a closed parcel and press the edges firmly.
  • Transfer the rolls to a baking sheet lined with parchment paper and brush them with beaten egg.
  • Bake for 15–20 minutes until golden and the puff pastry has puffed up beautifully.
  • After removing them from the oven, let them cool briefly and serve.

Tips and variations

You can vary the cheese to taste; blue cheese or smoked cheese also work great. If you want a milder version, you can replace some of the bacon with ham. The rolls are also suitable as a base for other fillings, for example spinach or mushrooms.
