Preparation procedure

  • Whisk the egg whites with the sugar (4 tablespoons) until foamy. Whisk the yolks with the sugar (8 tablespoons) until foamy, add the water, the flour mixed with the baking powder and cocoa. Finally, gently fold in the whipped egg whites.
  • Spread the dough onto a baking sheet lined with parchment paper and bake in a preheated oven at 180 degrees for about 20 minutes.
  • Bring the milk, flour, granulated and vanilla sugar to a simmer over low heat — cook a thick pudding, then remove from the heat and let it cool. Beat the butter with the powdered sugar until fluffy and gradually add the cooled pudding by tablespoons, whipping into a smooth cream.
  • Using a cutter, cut circles from the dough and sandwich them with the cream. Also spread cream on the sides and roll them in coconut. Pour chocolate over the top to which you have added butter and oil. Let it set.
