Preparation procedure

  • Preparing the sponge: Whisk the egg whites with the sugar until stiff peaks form. Gradually, at low speed, fold in the yolks, flour, potato starch and vanilla sugar. Pour the batter into a greased and floured 22 cm cake pan.
  • Baking: Bake in a preheated oven at 170 °C for 25–30 minutes. Let the baked sponge cool to room temperature.
  • Apple layer: Simmer the peeled and chopped apples in 3/4 cup of water until soft. Then add the pudding powder and cook until the mixture thickens. Spread the hot apple mixture evenly over the cooled base.
  • Cream layer: Whip the whipping cream with the powdered sugar, fold in the sour cream and finally add the gelatin stabilizer according to the instructions. Layer the mixture over the apple filling and smooth the surface.
  • Finishing: Before serving, sprinkle the cake with grated chocolate. Ideally, let it chill in the refrigerator for several hours.
