Preparation procedure

  • Dough preparation In a bowl, cut up the butter, add the sifted flour with baking powder and sugar. Stir in the yolks and cocoa. With quick movements of your hands, work into a smooth dough. Roll out approximately 2/3 of the dough, transfer to a greased or parchment-lined baking sheet (30 × 40 cm). Wrap the remaining dough in cling film and chill in the refrigerator for 30 minutes to firm up.
  • Jam and apple layer Spread the chosen jam evenly over the base. Depending on whether your apples are grated or sliced, mix them with a tablespoon of lemon juice and the cinnamon, then arrange them on the jam.
  • Meringue layer Whisk the egg whites with a pinch of salt until soft peaks form, then gradually beat in the sugar and whisk until stiff peaks. Gently spread it over the apple layer.
  • Finishing with a lattice Grate the chilled remaining dough directly over the meringue (or roll it out into a thin sheet, cut into strips and create a lattice).
  • Baking Bake in a preheated oven at 180 °C (fan 160 °C) for 40 minutes, until the dough and meringue are golden.
  • Cooling and cutting After baking, let the slices cool on the baking sheet for 10 minutes, then transfer them to a rack and let cool completely. Cut into 20–24 pieces with a sharp knife.
