Try this simple recipe for a quick fruit cake that can be prepared in a few minutes and manages to impress with both its taste and appearance. You only need a basic batter, seasonal fruit and a few minutes in the oven – and you have a delicious dessert suitable to serve with coffee, for unexpected guests, or as a light snack.

  • Preparing the batter In a bowl, whip the eggs with the sugar until pale and frothy. Stir in the milk and oil until the mixture is smooth.
  • Dry ingredients Sift the flour with the baking powder and a pinch of salt into the bowl. Mix well again until you obtain a smooth, thinner batter.
  • Preparing the pan Preheat the oven to 180 °C. Lightly grease the pan (20 × 30 cm or a round pan 24 cm in diameter) with butter or oil. Arrange the halved strawberries (or slices of other fruit) evenly on the bottom.
  • Baking Pour the batter over the fruit and smooth the surface. Place in the oven and bake for 35–40 minutes, until the top turns golden and a skewer inserted into the center comes out dry.
  • Cooling and serving Remove the cake from the oven and let it cool. Before slicing, you can dust the cake with powdered sugar or garnish with fresh fruit and an herb (e.g., mint).
