When I think back to childhood, I am reminded of the smell of freshly baked pastry and juicy peaches in my grandmother’s kitchen. Preparation procedure

  • Sift the plain flour into a large bowl and add the cold butter cut into small pieces. Quickly work the butter into the flour with your fingertips until a crumb forms. Add the icing sugar, a pinch of salt and the egg and quickly form a smooth dough. If it sticks, add a little flour. Wrap the dough in cling film and chill in the fridge for 30 minutes.
  • In another bowl, mix the quark with the granulated sugar and vanilla sugar. Add the corn starch and, if desired, a tablespoon of cream for a creamier consistency. Stir well until the mixture is smooth.
  • Wash the peaches, remove the stones and cut them into thin slices. If they are very juicy, you can lightly toss them with a little sugar.
  • Preheat the oven to 175 °C. Roll the dough out on a floured surface to a thickness of about 4–5 mm and transfer it to a buttered or parchment-lined tin approximately 24 cm in diameter. Slightly raise the edges.
  • Spread the quark filling evenly over the dough. Then arrange the peach slices on top. Press them in lightly so they hold. Place in the preheated oven and bake for 40–45 minutes, until the surface turns golden and the peaches begin to lightly caramelize.
  • After baking, let the tart cool in the tin so the filling sets and it slices better. Before serving, dust with icing sugar and garnish with fresh mint. Serve with vanilla ice cream or cream to taste.
