This quark cake is easy to prepare, moist and incredibly delicious. Thanks to the combination of cocoa and light batter, delicate quark cream and optional chocolate glaze it resembles a sheet cake. Moreover, it is best after resting, when all the flavors perfectly meld.

Preparation procedure

  • Preparing the batter In a bowl, mix the eggs, sugar, oil, flour, milk, vanilla sugar and baking powder until you obtain a smooth batter. Pour half of the batter onto a baking sheet lined with parchment paper or greased with butter and dusted with flour. Add the cocoa and Granko to the second half of the batter, mix thoroughly and pour over the light batter.
  • Baking Bake in a preheated oven at 180–200 °C for approximately 20 minutes (every oven bakes differently, so check periodically). Let the baked base cool to room temperature.
  • Preparing the cream Cook a thick pudding from the milk and pudding powder, sweeten to taste. To the lukewarm pudding add the butter and quark, whip everything into a smooth cream. Spread the cream evenly over the cooled base and smooth it.
  • Chocolate glaze (optional) Melt the chocolate in a double boiler, then add the sour cream and mix well. Spread the glaze over the top of the cake and you can create decorative patterns.
  • Serving Let the cake chill in the refrigerator for at least 2 hours so the cream sets. Serve chilled, ideally with a cup of good coffee.
